As a senior at Christ the King High School, Jesse Rack had 13 catches and four touchdowns. Jesse Rack earned All-League honors and earned a spot in the Senior Bowl.

In 2005, Jesse Rack was a redshirted freshman on the Buffalo Bulls football roster. In 2006, the 6’3” 236 lbs tight end played in 11 games during the Buffalo Bulls football season. Jesse Rack recorded his first catch as a Buffalo Bulls football player which was good for eight yards and a touchdown. Jesse Rack also returned a kickoff for 22 yards against the RedHawks at the University of Buffalo Stadium. Jesse Rack appeared in 12 games and started 11 during the 2007 Buffalo Bulls football season. Jesse Rack had 15 catches for 191 yards, a touchdown and was the top Buffalo Bulls football player with 12.7 yards per catch average.
